Ingredients

  • 9 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 1 cup salsa
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to package instructions and set aside.

  2. In a large mixing bowl, combine the shredded chicken, salsa, black beans, corn, chili powder, cumin, garlic powder, salt, and pepper. Mix well.

  3. In a 9×13 inch baking dish, spread a small amount of the chicken mixture on the bottom. Place 3 lasagna noodles on top, followed by a layer of the chicken mixture, and then a layer of shredded cheddar cheese. Repeat this layering process until all ingredients are used, ending with a layer of cheese on top.

  4. Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

  5. Remove from the oven and let cool for a few minutes. Serve the Mexican chicken lasagna with a dollop of sour cream and a sprinkle of fresh cilantro.
