Ingredients

  • 1.5 pounds of pork shoulder, trimmed and cut into chunks
  • 1 tablespoon of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 can of diced tomatoes
  • 1 cup of chicken broth
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • 1 teaspoon of dried oregano
  • Salt and pepper, to taste
  • 4 large flour tortillas
  • 1 cup of cooked white rice
  • 1 cup of black beans, drained and rinsed
  • 1 cup of shredded cheese
  • Sour cream, guacamole, and salsa, for serving

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.

  2. Add the pork shoulder chunks to the skillet and brown them on all sides.

  3. Transfer the pork, onion, and garlic to a slow cooker. Add the diced tomatoes, chicken broth, chili powder, cumin, dried oregano, salt, and pepper. Stir well to combine.

  4. Cover the slow cooker and cook on low for 4 hours, or until the pork is tender and easily shreds with a fork.

  5. Once the pork is cooked, remove it from the slow cooker and shred it using two forks.

  6. Warm the flour tortillas in a dry skillet over medium heat, or in the oven.

  7. To assemble the burritos, spread a spoonful of cooked white rice on each tortilla. Top with a scoop of shredded pork, black beans, shredded cheese, sour cream, guacamole, and salsa.

  8. Roll the tortillas tightly, tucking in the sides as you go.

  9. Serve the burritos warm, and enjoy!
