Ingredients

  • 2 lbs beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 2 tsp paprika
  • 1 tsp ground coriander
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups beef broth
  • 1 cup diced tomatoes
  • 1/4 cup apple cider vinegar
  • 8 corn tortillas
  • Fresh cilantro, chopped (for serving)
  • Finely diced onion (for serving)
  • Lime wedges (for serving)

Instructions

  1. In a large pot, combine the beef chuck roast, chopped onion, minced garlic, bay leaves, cumin, oregano, paprika, coriander, salt, and black pepper. Pour in the beef broth, diced tomatoes, and apple cider vinegar.

  2. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 3-4 hours, or until the beef is tender and easily shreddable.

  3. Remove the beef from the pot and shred it using two forks. Skim off any excess fat from the cooking liquid.

  4. Heat a large skillet over medium heat and lightly toast the corn tortillas on each side until they are pliable.

  5. To assemble the tacos, place a spoonful of the shredded beef onto each tortilla. Top with chopped cilantro, diced onion, and a squeeze of fresh lime juice.
