  • 2 lbs chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups beef broth
  • 1 lime, juiced
  • Tortillas and toppings (such as salsa, avocado, and cilantro) for serving


  1. In a slow cooker, place the chuck roast, onion, garlic, chili powder, cumin, paprika, oregano, salt, and black pepper.

  2. Pour the beef broth over the roast.

  3. Cook on low for 8 hours or on high for 4 hours, until the meat is tender and easily shreds with a fork.

  4. Once cooked, remove the chuck roast from the slow cooker and shred the meat using two forks.

  5. Return the shredded meat to the slow cooker and stir in the lime juice.

  6. Cook for an additional 10 minutes to allow the flavors to blend together.

  7. Serve the shredded chuck roast in tortillas with your desired toppings.
