Ingredients

  • 2 cups cooked pinto beans
  • 2 tablespoons vegetable oil
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt, to taste
  • 1/4 cup water

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.

  2. Add the cooked pinto beans to the skillet and mash them using a potato masher or the back of a spoon until they are mostly smooth.

  3. Stir in the ground cumin, chili powder, and salt. Cook for another 2-3 minutes, stirring occasionally.

  4. Pour the water into the skillet and stir well to incorporate. Reduce the heat to low and continue cooking for about 15 minutes, stirring occasionally, until the beans thicken to your desired consistency.

  5. Serve the frijoles refritos as a side dish or as a filling for tacos, burritos, or quesadillas.
