  • 1 cup cooked pinto beans
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/4 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.

  2. In a blender or food processor, blend the cooked pinto beans until smooth.

  3. In a mixing bowl, combine the bean puree, flour, sugar, cocoa powder, baking powder, and salt.

  4. In a separate bowl, whisk together the vegetable oil, eggs, vanilla extract, and milk.

  5. Gradually add the wet ingredients to the dry ingredients, mixing until well combined.

  6. Stir in the chocolate chips.

  7. Pour the batter into the prepared cake pan and level the top.

  8. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.

  9. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
