How To Make Delicious Beef Tongue Tacos

  • 1 beef tongue (about 2 pounds)
  • 1 onion, quartered
  • 4 cloves of garlic
  • 1 bay leaf
  • 1 tablespoon of salt
  • 1 tablespoon of ground cumin
  • 1 teaspoon of chili powder
  • 1 teaspoon of paprika
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of cayenne pepper (optional)
  • 1 tablespoon of vegetable oil
  • 8 small flour tortillas
  • Toppings: diced onions, chopped cilantro, salsa, lime wedges


  1. In a large pot, place the beef tongue, onion, garlic, bay leaf, and salt. Add enough water to cover the tongue by about an inch.

  2. Bring the water to a boil and reduce heat to low. Simmer for 3-4 hours, or until the tongue is tender and easily pierced with a fork.

  3. Remove the tongue from the pot and let it cool slightly. Peel off the tough outer skin and discard.

  4. In a small bowl, mix together the cumin, chili powder, paprika, black pepper, and cayenne pepper (if using).

  5. Rub the spice mixture all over the tongue, ensuring it is well coated.

  6. Heat the vegetable oil in a skillet over medium-high heat. Sear the tongue on all sides until it is nicely browned, about 3-4 minutes per side.

  7. Remove the tongue from the skillet and let it rest for a few minutes before slicing it thinly.

  8. Warm the flour tortillas in a dry skillet or in the microwave.

  9. To assemble the tacos, place a few slices of beef tongue on each tortilla. Top with diced onions, chopped cilantro, salsa, and a squeeze of lime juice.
