Ingredients

  • 1.5 lbs ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 avocado, diced
  • 1 cup black beans, rinsed and drained
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the ground beef, breadcrumbs, milk, ketchup, brown sugar, soy sauce, garlic, cumin, paprika, salt, and black pepper. Mix well.

  3. Shape the meat mixture into a loaf and place it on a greased baking dish.

  4. In a small bowl, whisk together the ketchup and brown sugar. Brush this mixture over the top of the meatloaf.

  5. Bake the meatloaf for 45 minutes, or until it reaches an internal temperature of 160°F (71°C).

  6. While the meatloaf is baking, make the avocado and black bean salsa. In a separate bowl, combine the diced avocado, black beans, red onion, cilantro, and lime juice. Mix well.

  7. Once the meatloaf is done, let it rest for 5 minutes before slicing.

  8. Serve the sticky baked meatloaf with the avocado and black bean salsa on top.
