  • 8 lasagna noodles
  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 jalapeno pepper, seeded and diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup salsa
  • 1/4 cup fresh cilantro, chopped
  • Sour cream and guacamole, for serving

Instructions

  1. Preheat the oven to 350°F (175°C). Cook the lasagna noodles according to package instructions, then drain and set aside.

  2. In a large skillet, brown the ground beef over medium heat. Add the onion, garlic, bell pepper, and jalapeno pepper, and cook until the vegetables are tender.

  3. Stir in the diced tomatoes, black beans, corn, chili powder, cumin, salt, and black pepper. Cook for an additional 5 minutes, until heated through.

  4. In a greased 9×13-inch baking dish, arrange a layer of lasagna noodles. Spread half of the beef mixture over the noodles, then sprinkle with 1/2 cup of the cheddar cheese and 1/2 cup of the Monterey Jack cheese. Repeat the layers, ending with a layer of noodles on top.

  5. Pour the salsa evenly over the lasagna. Cover the dish with foil and bake for 30 minutes. Remove the foil and sprinkle the remaining cheese over the top. Bake uncovered for an additional 10 minutes, until the cheese is melted and bubbly.

  6. Garnish with fresh cilantro and serve hot with sour cream and guacamole.
