Ingredients
- 2 cans of mixed beans, drained and rinsed
- 1 chorizo sausage, sliced
- 2 cloves of garlic, minced
- 1 red onion, thinly sliced
- 1 bunch of fresh parsley, chopped
- 2 tablespoons of olive oil
- 1 tablespoon of red wine vinegar
- Salt and pepper to taste
Instructions

Heat a skillet over medium heat and cook the chorizo slices until crispy. Remove from the skillet and set aside.

In the same skillet, add the minced garlic and sliced red onion. Sauté until softened.

Add the drained beans to the skillet and cook for 5 minutes, stirring occasionally.

In a separate bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
