- 1/4 cup chopped onions
- Salt and pepper to taste
Instructions
-
Preheat oven to 350°F (175°C).
-
In a large skillet, scramble the eggs over medium heat. Season with salt and pepper.
-
Once the eggs are cooked, remove from heat and stir in the shredded cheese, diced ham, chopped bell peppers, and chopped onions.
-
Lay out the tortillas and divide the egg mixture evenly among them, placing it in the center of each tortilla.
-
Fold in the edges of the tortillas and then roll them up tightly, creating a burrito shape.
-
Place the wrapped burritos on a baking sheet and bake in the preheated oven for 15 minutes, or until heated through.

Allow the burritos to cool slightly before serving, or let them cool completely before freezing.
-
To freeze, remove the foil and place the burritos in a resealable freezer bag. Label and date the bag.
-
When ready to reheat, remove the desired number of burritos from the freezer and reheat in the microwave for 2-3 minutes, until heated through.
-
Serve the reheated breakfast burritos with salsa, sour cream, or your favorite toppings.
