Ingredients

  • 4 large tortillas
  • 8 eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced ham
  • 1/2 cup chopped bell peppers
  • 1/4 cup chopped onions
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a large skillet, scramble the eggs over medium heat. Season with salt and pepper.

  3. Once the eggs are cooked, remove from heat and stir in the shredded cheese, diced ham, chopped bell peppers, and chopped onions.

  4. Lay out the tortillas and divide the egg mixture evenly among them, placing it in the center of each tortilla.

  5. Fold in the edges of the tortillas and then roll them up tightly, creating a burrito shape.

  6. Wrap each burrito tightly in aluminum foil.

  7. Place the wrapped burritos on a baking sheet and bake in the preheated oven for 15 minutes, or until heated through.

  8. Allow the burritos to cool slightly before serving, or let them cool completely before freezing.

  9. To freeze, remove the foil and place the burritos in a resealable freezer bag. Label and date the bag.

  10. When ready to reheat, remove the desired number of burritos from the freezer and reheat in the microwave for 2-3 minutes, until heated through.

  11. Serve the reheated breakfast burritos with salsa, sour cream, or your favorite toppings.
