Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1 cup enchilada sauce
  • 8 flour tortillas
  • 1/4 cup chopped fresh cilantro
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, combine the chicken, black beans, corn, half of the cheddar cheese, and half of the enchilada sauce. Season with salt and pepper to taste.

  3. Warm the tortillas in the microwave for about 20 seconds to make them more pliable.

  4. Spoon the chicken and bean mixture onto each tortilla and roll it up tightly. Place the rolled tortillas in a greased baking dish.

  5. Pour the remaining enchilada sauce over the tortillas and sprinkle with the remaining cheddar cheese.

  6. Bake in the preheated oven for 25 minutes, or until the enchiladas are heated through and the cheese is melted and bubbly.

  7. Remove from the oven and garnish with fresh cilantro.

  8. Serve hot and enjoy!
