How To Make Greek Lemon Chicken Soup

Ingredients
- 4 cups chicken broth
- 1 lb boneless, skinless chicken breasts
- 1/2 cup orzo pasta
- 3 eggs
- 1/4 cup fresh lemon juice
- 2 tbsp chopped fresh dill
- Salt and pepper to taste
Instructions

In a large pot, bring the chicken broth to a boil.

Add the chicken breasts and simmer for 20 minutes or until cooked through. Remove the chicken and shred it.

Bring the broth back to a boil and add the orzo. Cook according to package instructions.

In a medium bowl, whisk together the eggs and lemon juice.

Slowly pour 1 cup of the hot broth into the egg mixture, whisking continuously.

Gradually add the egg mixture back into the pot, stirring constantly.

Add the shredded chicken and chopped dill to the pot. Season with salt and pepper.

Simmer for an additional 5 minutes.

Serve hot and garnish with additional dill, if desired.
