Ingredients

  • 8 oz. Kasseri cheese
  • 2 tbsp all-purpose flour
  • 1/4 cup olive oil
  • 2 tbsp brandy
  • 2 tbsp lemon juice
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cut the Kasseri cheese into 1/2-inch-thick slices.

  2. Dredge the cheese slices in flour, shaking off any excess.

  3. Heat the olive oil in a large skillet over medium heat.

  4. Add the cheese slices to the hot oil and cook until golden brown, about 2 minutes per side.

  5. Remove the skillet from the heat and carefully add the brandy.

  6. Ignite the brandy with a long match or lighter and let it burn for a few seconds until the flames subside.

  7. Squeeze fresh lemon juice over the cheese and sprinkle with chopped parsley.

  8. Serve the Saganaki immediately while it is still hot and gooey.
