- 2½lbspotatoes,peeled, quartered
- 4garlic cloves,minced
- 1lemon,juiced
- ¼cupolive oil
- 1½cupschicken broth
- ½tsporegano
- salt and pepper,to taste
Instructions

Preheat the oven to 400 degrees F.

Combine the garlic, lemon, olive oil, chicken broth, oregano, salt, and pepper in a bowl.

Place the potatoes in a greased 9×13-inch pan, metal preferred.

Pour the chicken broth mixture over the potatoes.

Roast for 45 minutes. Stir and roast for an additional 45 minutes.
