How To Make Chicken Santorini

Ingredients
- 2 lb frying chicken
- 3 tbsp butter
- 3 tbsp olive oil
- 1 large onion, diced
- 1 green pepper, diced
- 2 garlic cloves, minced
- 1 celery rib, finely chopped
- 1/2 cup white wine
- 8 oz can tomato sauce
- 1/2 cup cheese, grated
- salt
- pepper
- water
Instructions

Clean chicken and cut into pieces. Wash well with cold running water, drain and pat dry. Heat butter and oil in 6-qt. pot.

Add onion, green pepper, garlic and celery, and cook until soft. Add chicken pieces and cook until brown on all sides.

Combine wine, tomato sauce, cheese, salt, pepper and 1/2 water in bowl and mix well. Pour over chicken.

Cover pot and simmer for 40 minutes or until chicken is done. Serve with white rice or pasta.
