  • 4cupswhole milk
  • ½cupheavy cream
  • ¼tspsalt
  • 3tbspwhite vinegar,or lemon juice


  1. Combine the milk, cream, and salt in a large pot.

  2. Heat over medium heat while stirring just until the mixture comes to a boil.

  3. Remove from heat and add vinegar. Stir just a few times to combine.

  4. Leave the mixture to sit undisturbed for 30 minutes.

  5. Line a strainer with 2 layers of damp cheesecloth. Gently spoon the ricotta curds into the strainer.

  6. Allow to drain for 30 to 45 minutes.

  7. Serve over scones, lasagnas, and other desired dishes. Enjoy!
