Preparation: 20 minutes
Cooking: 30 minutes
Total: 50 minutes

Serves:

Ingredients

  • 1 gallon of whole milk
  • 1/4 cup of white vinegar
  • 1 teaspoon of salt
  • Optional: herbs, spices, or flavorings of your choice

Instructions

  1. Heat the milk in a large pot over medium heat until it reaches a temperature of 180°F (82°C), stirring occasionally to prevent scorching.

  2. Once the milk reaches the desired temperature, remove it from heat and slowly add the vinegar, stirring gently for about 2 minutes.

  3. Let the mixture sit undisturbed for 5 minutes to allow the curds to form.

  4. Line a colander with cheesecloth and place it over a large bowl or sink.

  5. Gently pour the curds and whey into the colander, allowing the whey to drain away.

  6. Once most of the whey has drained, gather the edges of the cheesecloth and gently squeeze to remove any remaining liquid.

  7. Open the cheesecloth and sprinkle salt over the curds, then gently mix to incorporate.

  8. If desired, add herbs, spices, or flavorings of your choice and mix well.

  9. Transfer the cheese to a container and refrigerate for at least 2 hours to allow it to set and develop its flavor.

  10. Homemade cheese is now ready to be enjoyed!
