How To Make Cheese Ball Bites

These cheese ball bites are packed with three kinds of cheese, rolled in pecans, dried cranberries, and herbs. Prep these appetizers in 10 minutes!

  • 8ozblock cream cheese,softened
  • 4ozmascarpone cheese,softened
  • 6ozsharp white cheddar cheese,finely grated
  • salt and pepper,to taste
  • ¾cuppecans,finely chopped, regular or candied pecans
  • ¾cupdried cranberries,chopped
  • ½cupchives,thinly sliced
  • ¼cupparsley,finely chopped


  1. Place the cream cheese and mascarpone cheese in a bowl. Using a mixer or a large spoon, mix until thoroughly combined.

  2. Add the cheddar cheese and salt and pepper to taste, mix until well combined.

  3. Roll the mixture into bite-sized cheese balls.

  4. Place the cranberries and pecans on two plates. Mix together the chives and parsley and put the herbs on a third plate.

  5. Roll ⅓ of the cheese balls in the pecans, ⅓ in the cranberries, and ⅓ in the herbs.

  6. Refrigerate until ready to serve.
