How To Make Broccoli and Cheese Tots
Bake a slightly healthier batch of these gooey cheese tots, packed with tender broccoli and seasoned breadcrumbs, for a more scrumptious snack!
Blanch the broccoli in a pot of boiling water for 1 minute, then rinse under cold water. Drain well and dry on paper towel.
Using a knife, finely chop the broccoli, and set 2 cups aside.
Preheat the oven to 400 degrees F. Spray a nonstick cookie sheet with cooking spray.
In a medium bowl, combine the broccoli, egg, egg white, scallion, cheddar cheese, seasoned breadcrumbs, and season with salt and pepper to taste.
Spoon heaping tablespoons of the mixture in hands and roll into small ovals.
Place on the cookie sheet and bake for about 16 to 18 minutes, turning halfway through cooking until golden.
Serve warm, and enjoy!
