Serves:
Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 2/3 cup milk
- 1/2 cup raisins or currants
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- 1-2 tsp milk
Instructions
-
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
-
In a large bowl, combine the flour, sugar, baking powder, and salt.
-
Add the cold butter to the dry ingredients and use a pastry cutter or your fingertips to cut it into the flour mixture until it resembles coarse crumbs.
-
Stir in the milk and raisins until the dough comes together. Do not overmix.
-
Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together.
-
Pat the dough into a 1-inch thick circle and cut out scones using a round biscuit cutter. Place them onto the prepared baking sheet.
-
Bake for 10-12 minutes or until the scones are lightly golden on top.
-
In a small bowl, mix together the powdered sugar, vanilla extract, and enough milk to make a thick icing. Place the icing into a piping bag or a small plastic bag with the tip cut off.
-
Pipe a cross shape onto each scone using the icing. Let the icing set before serving.
