How To Make Peanut Butter Pinwheel Candy

Treat your tastebuds to a nutty bite with this peanut butter pinwheel candy. These 5-ingredient sweets are made with mashed potatoes for a heavenly dessert.

Preparation: 1 hour
Cooking:
Chill Time: 1 hour
Total: 2 hours

Serves:

Ingredients

  • ½cupmashed potatoes
  • ½cupsalted butter,softened
  • 6cupspowdered sugar,plus additional for dusting
  • 2tspvanilla extract
  • creamy peanut butter,for filling

Instructions

  1. With an electric mixer, combine the mashed potatoes, butter, and 1 cup of sugar.

  2. Add in remaining sugar, one cup at a time. Stir in the vanilla.

  3. Refrigerate the filling for 1 hour.

  4. Once chilled, divide the dough into 2 pieces and place 1 piece on a clean surface dusted generously with powdered sugar.

  5. Dust the surface of the dough with additional sugar, and use a rolling pin to roll the dough out into a rectangle about ¼-inch thick.

  6. Spread dough evenly with peanut butter, leaving a small amount of space peanut butter-free around the perimeter of the dough. Starting with the longer side of the rectangle, gently but tightly roll into a lot.

  7. Use a knife to slice into pieces about ½-inch thick. Repeat with the remaining half of the dough.

  8. Serve and enjoy.

Recipe Notes

  • If the dough is not moldable in your hands and can’t be rolled into a ball, continue to add sugar until it is firm.
  • Make sure that your dough can be rolled at this point, if it’s too sticky or falling apart, you may need to add more sugar, re-shape it into a ball, and start over.
