Ingredients

  • 2 cups of long-grain rice
  • 1 tablespoon of olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground turmeric
  • 1 teaspoon of ground cumin
  • 1 teaspoon of salt
  • 4 cups of chicken or vegetable broth

Instructions

  1. Rinse the rice under cold water until the water runs clear. Set aside.

  2. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.

  3. Add the ground turmeric, ground cumin, and salt to the pot. Stir well to combine the spices with the onion and garlic.

  4. Add the rinsed rice to the pot, and stir to coat it with the spices and onions.

  5. Pour in the chicken or vegetable broth and bring it to a boil.

  6. Once it boils, reduce the heat to low and cover the pot. Let the rice simmer for 15-20 minutes, or until all the liquid is absorbed and the rice is tender.

  7. Remove the pot from the heat and let it sit, covered, for 5 minutes.

  8. Fluff the rice with a fork before serving.
