  • 1 cup white rice
  • 1 3/4 cups chicken broth
  • 1/2 cup diced tomatoes, drained
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well.

  2. In the rice cooker, heat the olive oil on the sauté setting. Add the onion and garlic, and sauté until softened.

  3. Add the rinsed rice to the rice cooker along with the diced tomatoes, cumin, paprika, salt, and black pepper. Stir well to combine.

  4. Pour in the chicken broth and give it a gentle stir.

  5. Close the rice cooker and set it to the “Cook” or “White Rice” setting.

  6. Once the rice is cooked, fluff it with a fork and let it sit for a few minutes to steam.

  7. Serve the Spanish rice garnished with fresh cilantro, if desired.
