How To Make Caterpillar Roll

Have an exciting sushi dinner with this caterpillar roll recipe. Tasty unagi with fresh cucumbers rolled in an easy-to-make sushi roll that will impress everybody.

Ingredients

  • ¼ cup soy sauce
  • ¼ cup sake
  • ¼ cup evaporated cane sugar
  • 1 batch prepared sushi rice, cooked
  • 2 packs unagi, cut into ½ inch strips
  • 2 avocados, halved, peeled, pitted and sliced
  • 1 hot house cucumbers, seeds removed with a spoon and cut into sticks
  • 1 pack unseasoned nori

Instructions

  1. To make the kabayaki sauce get a small saucepan and add the soy sauce, sake, and sugar. Boil on medium-high heat until the mixture becomes thick and syrupy.
  2. Prepare the sushi mat by covering it with a piece of plastic wrap. Fold the nori in half and cut it using a pair of scissors. Place the nori on top of the sushi mat. Then with wet hands add a small amount of rice to the nori.
  3. Spread the rice evenly across the nori then flip it to the other side, rice side facing down.
  4. Place the unagi and cucumbers horizontally just below the center of the nori.
  5. Place thumbs underneath the mat and lift carefully. Then roll the mat over to cover the filling. Squeeze firmly to get a tight cylindrical roll. Keep rolling and squeezing until ends meet.
  6. Add the avocado slices over the roll and make sure each slice overlaps the next. Then wrap the roll with the sushi mat and give it one more squeeze.
  7. Transfer the Roll to a cutting board and using a knife cut the sushi into 8 equal bite-sized pieces.
  8. Transfer the sushi to a plate and drizzle with kabayaki sauce or serve on the side.
