Ingredients

  • 2 cups of long grain rice
  • 1 pound of chicken, cut into pieces
  • 2 ripe plantains, sliced
  • 2 red bell peppers, chopped
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons of vegetable oil
  • 1 teaspoon of thyme
  • 1 teaspoon of curry powder
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne pepper
  • 1 can of diced tomatoes
  • 2 cups of chicken broth
  • Salt and pepper to taste

Instructions

  1. Rinse the rice with cold water until the water runs clear. Set aside.

  2. Heat the vegetable oil in a large pot over medium heat. Add the chicken pieces and cook until browned on all sides.

  3. Remove the chicken from the pot and set aside. In the same pot, add the onions, garlic, and bell peppers. Cook until the onions are soft and translucent.

  4. Add the thyme, curry powder, paprika, and cayenne pepper. Stir to coat the vegetables with the spices.

  5. Pour in the diced tomatoes and chicken broth. Bring to a boil, then reduce heat to low and let simmer for 10 minutes.

  6. Add the rice to the pot and stir to combine. Return the chicken pieces to the pot and season with salt and pepper.

  7. Cover the pot and cook on low heat for 30 minutes, or until the rice is tender and the liquid has been absorbed.

  8. While the rice is cooking, heat 2 tablespoons of vegetable oil in a separate pan. Add the sliced plantains and fry until golden brown on both sides. Remove from heat and set aside.

  9. Serve the Nigerian Jollof Rice with the fried plantains on top. Enjoy!
