Ingredients

  • 1 cup long grain white rice
  • 1 cup water
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup diced celery
  • 2 cloves garlic, minced
  • 1/2 pound cooked sausage, sliced
  • 1/2 pound cooked chicken, diced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • Chopped green onions and parsley for garnish

Instructions

  1. In a microwave-safe dish, combine rice, water, diced tomatoes (with their juice), onion, bell pepper, celery, and garlic.

  2. Microwave on high for 5 minutes, then stir.

  3. Add the sausage, chicken, Cajun seasoning, thyme, oregano, cayenne pepper, paprika, salt, and pepper to the dish and stir well.

  4. Cover the dish with a microwave-safe lid or plastic wrap, leaving a small vent.

  5. Microwave on high for 10 minutes, then stir.

  6. Microwave for another 10 minutes or until rice is tender and liquid is absorbed.

  7. Let it sit for 5 minutes, then fluff the rice with a fork.

  8. Serve hot, garnished with chopped green onions and parsley.
