Ingredients
- 2 lb boneless chicken thighs, skinless
- 1 lb sausage, sliced, smoked
- 1 large onion, chopped
- 3 stalks celery, chopped
- 1 can tomatoes , diced , with juice
- 2 cloves garlic, chopped
- 2 cups chicken broth
- 1 tbsp Cajun spice mix
- 1 tsp thyme, dried
- 1 tsp oregano, dried
- 1 lb shrimp, peeled and deveined
- 2 cups long-grain rice
Instructions
- Mix the chicken, sausage, onion, celery, tomatoes, garlic, chicken broth, spice mix, thyme, and oregano in a slow cooker. Cook on low for 5 hours.
- Put in the shrimp and rice and raise the heat to high.
- Cook for another 30 minutes and top with green onions if desired.
