Ingredients

  • 2 lb boneless chicken thighs, skinless
  • 1 lb sausage, sliced, smoked
  • 1 large onion, chopped
  • 3 stalks celery, chopped
  • 1 can tomatoes , diced , with juice
  • 2 cloves garlic, chopped
  • 2 cups chicken broth
  • 1 tbsp Cajun spice mix
  • 1 tsp thyme, dried
  • 1 tsp oregano, dried
  • 1 lb shrimp, peeled and deveined
  • 2 cups long-grain rice

Instructions

  1. Mix the chicken, sausage, onion, celery, tomatoes, garlic, chicken broth, spice mix, thyme, and oregano in a slow cooker. Cook on low for 5 hours.
  2. Put in the shrimp and rice and raise the heat to high.
  3. Cook for another 30 minutes and top with green onions if desired.
