  • 1 cup long-grain white rice
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. Cook the rice according to package instructions.

  2. In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic. Sauté until softened, about 5 minutes.

  3. Stir in the cumin, paprika, salt, and black pepper. Cook for 1 minute.

  4. Add the diced tomatoes, including the juice, and chicken broth. Bring to a simmer.

  5. Stir in the cooked rice and reduce the heat to low. Cover and let simmer for 10 minutes, or until the liquid is absorbed.

  6. Fluff the rice with a fork, then garnish with chopped cilantro before serving.
