Ingredients

  • 3 cups cooked rice
  • 2 tablespoons vegetable oil
  • 1 cup diced mixed vegetables (carrots, peas, corn, bell peppers)
  • 1 cup diced cooked chicken or shrimp (optional)
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 2 eggs, beaten
  • 1/4 cup sliced green onions
  • Salt and pepper, to taste

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium heat. Add garlic and cook until fragrant.

  2. Add mixed vegetables and stir-fry for 2-3 minutes until slightly tender.

  3. Push the vegetables to one side of the skillet and pour beaten eggs onto the empty side. Scramble the eggs until cooked through.

  4. Add diced chicken or shrimp (if using) to the skillet and cook until heated through.

  5. Add cooked rice to the skillet and stir-fry for 3-4 minutes, breaking up any clumps.

  6. Stir in soy sauce, oyster sauce, and sesame oil. Mix well to coat the rice and vegetables.

  7. Cook for an additional 2-3 minutes until everything is heated through and well combined.

  8. Season with salt and pepper to taste.

  9. Remove from heat and garnish with sliced green onions.

  10. Serve hot and enjoy!
