
How To Make Dee’s Mexican Rice
This Mexican rice is an easy and spicy rice recipe that can be turned into a main dish when added with black beans to the rice when cooking.

Ingredients
- 1tbspVegetable Oil
- 1tspground turmeric
- 1tspgarlic powder
- ½tspground cumin
- ½tspground coriander seed
- 2tsppaprika
- pinchred pepper flakes
- pinchCayenne pepper
- 3green onions
- 1green bell pepper,chopped
- 1cupcorn kernels,pre-cooked
- 2small tomatoes,diced
- ¼cupketchup
- 2cupscooked rice
- salt,to taste
Instructions

Heat oil in a wok-style pan with turmeric, garlic powder, cumin, coriander, paprika, chili flakes, and cayenne pepper. Add the green onions and the green peppers. Saute for 1 to 2 minutes over medium-high heat.

Add corn and tomatoes then saute until tomatoes release their juices. Add ketchup and stir until mixed.

Add rice and stir until heated thoroughly. Salt to taste.
