Ingredients
- 1 cup jasmine rice
- 1 cup coconut milk
- 1 cup water
- Zest of 1 lime
- Juice of 1 lime
- Salt to taste
- Fresh chopped cilantro for garnish
Instructions

Rinse the jasmine rice under cold water until the water runs clear.

In a saucepan, combine the rinsed rice, coconut milk, water, lime zest, lime juice, and salt.

Bring the mixture to a boil over medium heat, then reduce the heat to low and cover the saucepan with a lid.

Cook for about 15-20 minutes or until the rice is tender and all the liquid is absorbed.
