How To Make Cilantro Lime Chicken and Veggie Rice Meal Prep
This chicken and veggie rice recipe made with juicy chicken, veggies, beans, and lime wedges on the side is an easy dish you can make ahead for lunch.

Ingredients
- oil,your preference, to taste
- 1lbchicken breast,boneless, skinless, cubed
- salt and pepper,to taste
- 1lime,juiced
- ⅓cupfresh cilantro,minced
- 1red bell pepper,diced
- ½red onion,diced
- 2clovesgarlic,minced
- 1bagriced cauliflower
- 1cupcorn,steamed
- ½tspchili powder,optional
- 1canblack beans,rinsed, drained, optional
- lime wedges,optional
Instructions

Heat the preferred cooking oil in a large skillet over medium-high heat.

Add the chicken, season with salt and pepper, and cook until cooked through and no longer pink.

Add the lime juice and cilantro. Stir to combine.

Remove the chicken from the pan, place on a plate, and set aside.

Add a little more oil to the pan if needed, then add the red onion, bell pepper, and garlic.

Stir to combine. Allow to cook until the onion begins to turn transparent while stirring occasionally.

Add the riced cauliflower, corn, and chili powder. Cook until the cauliflower is soft, then remove from heat.

Distribute the black beans, chicken, and cauliflower mixture evenly between 4 containers.

Top with a wedge of lime.
