
How To Make Black Beans & Rice
Black beans and rice flavored with a squeeze of lime juice, garlic, and spices for a filling and hearty rice recipe cooked to perfection that you will love.
Serves:
Ingredients
- 2tbspolive oil
- 1onion,finely chopped
- 5garlic cloves,minced
- 1½tspground cumin
- 2cupuncooked white rice,long grain or jasmine rice
- 4cupschicken broth,or stock
- 28ozblack beans,drained and rinsed
- 4tbsplime juice,adjust to your tastes
- 4tbspcoriander,or parsley, finely chopped, for garnish
Instructions

Heat oil in a stockpot or saucepan over medium-high heat. Add the onion and sauté until the onion is transparent.

Add the garlic and sauté for a further minute. Add the cumin and rice, mix the flavors through, and sauté for a further minute.

Pour in the broth and beans, bring to a boil, cover, reduce heat and simmer for 20 minutes, or until rice is tender.

Remove from heat and drizzle with a small amount of olive oil, lime juice, and cilantro.

Taste test; season with a little salt and pepper, only if needed and as desired.
