  • 1 cup of rice
  • 1 can of black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 1 jalapeno pepper, seeded and diced
  • 1 tsp of cumin
  • 1 tsp of paprika
  • 1/2 tsp of chili powder
  • Salt and pepper to taste
  • 2 cups of vegetable broth
  • 2 tbsp of olive oil
  • Fresh cilantro, chopped (for garnish)


  1. In a large pot, heat the olive oil over medium heat. Add the onions, garlic, bell pepper, and jalapeno pepper. Cook until softened, about 5 minutes.

  2. Add the rice, cumin, paprika, chili powder, salt, and pepper to the pot. Stir to coat the rice with the spices.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.

  4. Stir in the black beans and cook for an additional 5 minutes to heat through.

  5. Serve hot, garnished with fresh cilantro.
