Skip plain old rice and go for this Mexican-inspired lime rice recipe. This vibrantly green dish has creamy avocados & brightly-flavored coriander as well.

  • cupsbrown,cooked, preferably day old
  • 2mediumripe avocados,(11 oz), before peeling and coring
  • 2tbspfresh lime juice
  • ¼cupcilantro,chopped
  • ¼tspground cumin,heaping
  • 1smallgarlic,clove, minced, optional
  • salt and freshly ground black pepper,to taste


  1. Mash avocados in a large mixing bowl. Stir in lime juice, cilantro, cumin and garlic, then season with salt and pepper to taste.

  2. Stir in warm cooked rice and serve warm.
