Ingredients
- 2 cups of cooked rice
- 1 cup of mixed vegetables (carrots, peas, corn)
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 2 eggs, beaten
- Salt and pepper to taste
- Green onions, for garnish
Instructions

In a large skillet or wok, heat the sesame oil over medium heat.

Add the diced onion and minced garlic to the skillet and sauté until fragrant and translucent.

Add the mixed vegetables to the skillet and stir-fry for about 3-4 minutes, until they are tender.

Push the vegetables to one side of the skillet and pour the beaten eggs onto the other side. Scramble the eggs until they are fully cooked.

Add the cooked rice to the skillet and mix everything together.

Season with soy sauce, salt, and pepper to taste. Stir well to combine.
