How To Make Harissa Eggs in Purgatory

Have a quick Italian meal with this sumptuous Harissa eggs recipe! These eggs simmered in blazing hot tomato sauce is better enjoyed with bread!

Ingredients

  • ½tspolive oil
  • 2tbspred onion,minced
  • 14½ozpetite tomatoes,(1 can)
  • 2tbspHarissa,prepared, more if you like it spicier
  • 4large eggs
  • salt and pepper,to taste
  • 1tspparsley or chives,fresh chopped

Instructions

  1. Heat a large non-stick skillet over medium heat. Add the oil then the onion and sauté for about 2 to 3 minutes until golden.

  2. Add the tomatoes, harissa, salt, and pepper. Increase the heat to medium-high and simmer for about 3 to 4 minutes until the liquid reduces a bit.

  3. Reduce the heat to medium-low, carefully add the eggs, salt, and pepper. Cover.

  4. Cook for about 4 to 5 minutes until the top of the eggs set or to your liking.

  5. Top with chopped fresh parsley or chives and serve.
