Ingredients

  • 1tspdark sesame oil,divided
  • 1tbspfresh ginger,minced, peeled
  • 4clovesgarlic,minced
  • 1cupred bell pepper,finely chopped
  • 1cupscallions,chopped
  • 1tspcurry powder
  • 2tspred curry paste
  • ½tspcumin,ground
  • 4tsplow-sodium soy sauce,tamari for gluten-free
  • 1tbspbrown sugar
  • 2tspAsian fish sauce
  • 14ozlight coconut milk,(1 can)
  • ¼cupfresh cilantro,chopped
  • 6tilapia fillets,(6 oz)
  • salt
  • cooking spray
  • lime wedges,for serving

Instructions

  1. Preheat the broiler.

  2. Heat ½ teaspoon of oil in a large nonstick skillet over medium heat. Add the ginger, garlic, pepper, and scallions, and cook for 1 minute.

  3. Stir in the curry powder, curry paste, and cumin, and cook for 1 minute.

  4. Add the soy sauce, sugar, Asian fish sauce, and coconut milk. Bring to a simmer (do not boil).

  5. Remove from heat, and stir in cilantro or basil if using.

  6. Brush fish with ½ teaspoon of oil, then sprinkle with ¼ teaspoon of salt. Place the fish on a baking sheet coated with cooking spray.

  7. Broil for 7 minutes or until fish flakes easily when tested with a fork.

  8. Serve fish with sauce, rice, and lime wedges.
