  • 1 lb boneless, skinless chicken breasts, cut into small bite-sized pieces
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (4 oz) chopped green chilies
  • 2 cups gluten-free chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp ground black pepper
  • 1/4 tsp cayenne pepper
  • 1/2 cup sour cream
  • 1/2 cup shredded Monterey Jack cheese
  • Fresh cilantro, chopped, for garnish

Instructions

  1. In a 4-quart crock pot, combine the chicken, beans, onion, garlic, green chilies, chicken broth, cumin, oregano, black pepper, and cayenne pepper. Stir well.

  2. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is cooked through and the flavors have melded together.

  3. In a small bowl, whisk together the sour cream and shredded cheese. Stir this mixture into the crock pot.

  4. Serve hot, garnished with chopped cilantro.
