- 1 lb boneless, skinless chicken breasts, cut into small bite-sized pieces
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (4 oz) chopped green chilies
- 2 cups gluten-free chicken broth
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp ground black pepper
- 1/4 tsp cayenne pepper
- 1/2 cup sour cream
- 1/2 cup shredded Monterey Jack cheese
- Fresh cilantro, chopped, for garnish

In a 4-quart crock pot, combine the chicken, beans, onion, garlic, green chilies, chicken broth, cumin, oregano, black pepper, and cayenne pepper. Stir well.

Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is cooked through and the flavors have melded together.

In a small bowl, whisk together the sour cream and shredded cheese. Stir this mixture into the crock pot.
