  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup tapioca starch
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup mini chocolate chips (dairy-free)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, mix together almond flour, coconut flour, tapioca starch, baking soda, and salt.

  3. In a separate bowl, whisk together melted coconut oil, maple syrup, and vanilla extract.

  4. Add the wet ingredients to the dry ingredients and mix until well combined.

  5. Fold in the mini chocolate chips.

  6. Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheet.

  7. Flatten each cookie slightly with the back of a spoon.

  8. Bake for 10-12 minutes, or until the edges are golden brown.

  9. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
