Ingredients

  • 8 eggs
  • 1 tbsp olive oil
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 red onion, sliced
  • 2 cups spinach
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional toppings: shredded cheese, chopped herbs

Instructions

  1. Heat olive oil in a large skillet or frying pan over medium heat.

  2. Add the bell peppers and onion to the pan and sauté until they start to soften, about 5 minutes.

  3. Add the spinach to the pan and cook until wilted, about 2 minutes.

  4. Crack the eggs into the pan, spacing them evenly over the vegetables.

  5. Sprinkle the salt and pepper evenly over the eggs and vegetables.

  6. Cover the pan and cook for about 5-7 minutes, or until the eggs are cooked to your liking.

  7. Remove the pan from heat and let it sit for a minute.

  8. Optional: Sprinkle shredded cheese and chopped herbs over the eggs.

  9. Serve hot and enjoy!
