  • 1 cup grated zucchini
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (180°C).

  2. In a large bowl, combine the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract. Mix well.

  3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

  4. Gradually add the dry ingredients to the zucchini mixture, stirring until just combined.

  5. Fold in the chopped walnuts, if using.

  6. Pour the batter into a greased 8-inch (20 cm) round baking pan.

  7. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool before serving.
