Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1 and 1/2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 3/4 cup brewed coffee, cooled
  • 1/4 cup vodka
  • 1/4 cup Kahlua or coffee liqueur
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. In a separate bowl, combine the vegetable oil, brewed coffee, vodka, Kahlua, eggs, and vanilla extract. Mix well.

  4. Gradually pour the wet ingredients into the dry ingredients, mixing until just combined.

  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  6. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

  7. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  8. Serve as is or frost with your favorite chocolate frosting. Enjoy!
