Ingredients

  • 1 cup chopped dates
  • 1 tsp baking soda
  • 1 cup boiling water
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup shredded coconut
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch square baking pan.

  2. In a small bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let it sit for 5 minutes.

  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the date mixture. Mix well after each addition.

  5. Fold in the shredded coconut and chopped pecans.

  6. Pour the batter into the prepared baking pan and smooth the top.

  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  9. Serve the Queen Elizabeth Cake as is or dusted with powdered sugar.
