How To Make Swiss Roll

- 4 eggs
- 100g caster sugar
- 100g self-raising flour
- 1 tsp vanilla extract
- 200g whipped cream
- 50g powdered sugar
- Fresh strawberries, for garnish
Instructions

Preheat the oven to 180°C (350°F) and line a rectangular baking tray with parchment paper.

In a large bowl, whisk the eggs and caster sugar together until pale and fluffy.

Gradually add the self-raising flour and vanilla extract, gently fold until combined.

Pour the batter into the prepared baking tray, spread evenly with a spatula.

Bake in the preheated oven for 10 minutes or until lightly golden and springy to the touch.

Meanwhile, sprinkle a clean kitchen towel with powdered sugar.

Once baked, remove the sponge cake from the oven and immediately invert onto the prepared kitchen towel.

Carefully peel off the parchment paper and roll the sponge cake up tightly using the towel. Allow to cool completely.

In a separate bowl, whip the cream until soft peaks form. Gently unroll the cooled sponge cake and spread the whipped cream evenly over the surface.

Carefully roll the Swiss roll back up, using the towel to help guide the roll.

Trim the edges of the roll for a clean finish, and garnish with fresh strawberries.
