Buttermilk cake recipe for all strawberry lovers!

  • ¾ cup strawberries, mashed
  • 1 ⅓ cup buttermilk, or sour milk or half buttermilk and half skim for lighter recipe
  • 2 ½ cups all purpose flour
  • 3 oz strawberry-flavored gelatin powder
  • 2 cups sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ cup shortening, margarine or butter
  • 1 tsp vanilla
  • 4 egg whites
  • ¼ cup water


  1. Combine flour, sugar, baking powder, baking soda, ⅛ teaspoon salt and gelatin powder in a large bowl.

  2. Add milk, shortening and vanilla.

  3. Beat on low for 30 seconds then medium for 2 minutes, scraping the bowl occasionally.

  4. Beat in egg whites, water, and strawberries.
  5. Pour into 2 9-inch round greased and floured cake pans.
  6. Bake in a 350-degree oven for 30 minutes, until a toothpick inserted in center comes out clean.
