For Coffee Cake:

  • 2 cups all purpose flour
  • tsp baking powder
  • 1 tbsp pumpkin pie spice
  • ¾ cup brown sugar, packed
  • ¼ cup butter, softened
  • 1 cup pumpkin puree
  • ½ cup milk
  • 1 large egg

For Streusel Topping:

  • ¾ cup brown sugar, packed
  • ½ cup all purpose flour
  • 4 tbsp butter, softened
  • ½ tsp pumpkin pie spice


Coffee Cake:

  1. Preheat oven to 350 degrees F.

  2. In a medium bowl, combine flour, baking powder, and pumpkin pie spice. Set aside.

  3. In a separate mixing bowl, cream butter, and brown sugar.

  4. Mix in pumpkin puree, milk, and egg.

  5. Add dry ingredients and mix just until blended.

  6. Spoon batter into a greased 8x8-inch baking pan.

Streusel Topping:

  1. Prepare streusel by mixing ingredients together with a fork or pastry blender until they resemble coarse crumbs.

  2. Sprinkle streusel topping evenly over batter.

  3. Bake at 350 degrees F for 50 to 60 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean.
