  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup pineapple juice
  • 1/2 cup vegetable oil
  • 1/4 cup passion fruit puree
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a Bundt pan.

  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  3. In a separate bowl, mix together the pineapple juice, vegetable oil, passion fruit puree, eggs, and vanilla extract.

  4. Gradually pour the wet ingredients into the dry ingredients and mix until well combined.

  5. Pour the batter into the prepared Bundt pan and smooth the top.

  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  8. Once cooled, dust with powdered sugar or drizzle with a pineapple glaze if desired.

  9. Slice and serve.
