Serves:
Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1/4 cup creamy peanut butter
- 1/4 cup milk
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1/4 cup roasted peanuts, chopped (optional)
Instructions
-
Preheat the oven to 350°F (175°C). Grease and flour a round cake pan.
-
In a large mixing bowl, cream together the softened butter, peanut butter, and sugar until light and fluffy.
-
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
-
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the creamed mixture, alternating with milk. Mix until just combined.
-
Pour the batter into the prepared cake pan and smooth the top with a spatula. Sprinkle chopped peanuts on top, if desired.
-
Bake in the preheated oven for 25 minutes, or until a toothpick inserted into the center comes out clean.
-
Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
-
Serve the peanut butter cake on its own or with a dollop of whipped cream or a scoop of vanilla ice cream.
